If the thought of cooking stresses you out, you're not alone!
Perhaps you've watched too many cooking shows and feel that you could never live up to the likes of those television chef-inistas. Maybe you have a chronic illness, like me, which can deplete your energy and challenge your mobility. Or perhaps you learned early-on that you were no good in the kitchen - too messy, not-quite-right or doing it all wrong. Although the memories of that time may have dulled like those kitchen knives that aren't important enough to sharpen, the remnants of those feelings can come bursting into your kitchen like some starving teenager, causing you to reach for the take-out menu or another factory-processed frozen dinner.
In Cooking with Confidence, I share my kitchen with you and show you that meal prep does not have to be expensive, difficult, time-consuming, nor involve self-recriminations. I invite you to make healthier meals for your family - meals that the kids can help make. Teach them that they can experiment in the kitchen and that messes can be cleaned up and yes, sometimes a recipe doesn't work out!
Disclaimer: I'm not a nutritionist, just a home cook with a love of sharing meals and menus with my family and friends! I'll be posting some of my favourite meal ideas, along with tips to help you recognize when stress is holding you back by your apron strings.
Feed yourself and your family with nourishing recipes and tips. They're quick. They're easy. The idea is to get you in and out of the kitchen and on to doing what you love, fueled by food that will nourish and sustain you.

I actually love cooking but only do it when I have a whole afternoon to devote to preparation. I’m not very good at the “on the fly” or “last minute quick meals”. I love this idea. I can’t wait to read more 🙂
